Where were you born and raised?

Birmingham, AL.

What inspired you to become a chef?

I love food and people. Mostly food.

Where did you train to become a chef?

I am self-taught, but I have worked for some great chefs.

What does a typical workday involve?

Well, I’m the owner, the line cook, the accountant, the dishwasher, etc. So a little bit of everything.

If you won the lottery, how would you spend your winnings?

I would do what I would do now! And I would provide for my family—maybe a house in Wyoming and one on Ono Island.

If you weren’t a chef, what line of work would you pursue?

I’ve worked in several fields for extended periods, and food is number one to me, there is no backup. But probably…rock star!

If you could cook for any celebrity or historical figure, who would it be?

Frank Stitt.

What is your biggest pet peeve?

People not doing the little things in the kitchen.

What’s your favorite seafood dish to serve up for yourself and your family?

I love a simple grilled Gulf fish with parmesan grits and pan sauce.

There is no seafood in the world with the quality and options that we have here in the Gulf.
