Where were you born and raised?

I was born in West Palm Beach, Florida, raised in Mobile, Alabama.

What inspired you to become a chef?

I’m inspired by many things, like going to Old Bay Steamer and Zeke’s, eating seafood platters for my birthday when I was kid. Or going to China when I was eight and eating octopus for the first time. My mom is also an incredible cook. I grew up cooking with her and just learning everything I could, whether that meant helping my Mom with Thanksgiving or helping my Dad smoke brisket.

Where did you train to become a chef?

I was obsessed with the Food Network as a kid. “Iron Chef America” was my favorite thing to watch. When I was lost after high school, my parents recommended culinary school. That’s when I got my first cookbook, David Chang’s “Momofuku”. That cookbook changed my entire outlook on food. That’s when I knew for sure this is what I wanted to do. So I went to culinary school at Virginia College. Since then, I’ve worked for True, Noja, The Wash House, and a few more places.

What does your typical workday involve?

Well, being the owner, I have to wear many hats. Dishwasher, server, line cook, etc. After service is when I jump on things like emails, payroll, writing menus, ordering. Whatever needs to be done that day.

How are you working to make your current restaurant one of the best in the state?

I’m doing everything I can to utilize the best seafood I can get my hands on. I’m also trying to bring something special and unique to the table. Really stretch the boundaries of the culinary landscape in my area. We try to support local and other small businesses too. We get our grits from The Original Grit Girl, our produce from Local Appetite Growers, some oils and vinegars from Happy Olive, and some spices from Spice and Tea Exchange.

Who is the most notable person you’ve ever cooked for?

Bruce Willis, Nicolas Cage, Nick Saban, and Dave Bautista.

What is your favorite movie?

I grew up watching all of the Rocky movies with my dad. Those definitely hold a special place in my heart.

Auburn or Alabama?

Not a football guy, but my wife and the rest of my family would kill me if I didn’t say Alabama.

What’s your favorite seafood dish to serve up for yourself and your family?

We keep it pretty simple at home. My wife Bree loves Blue Crab treated simply. I don’t make it often, but I love a good old fashioned peel-and-eat shrimp.

What makes Alabama Gulf Seafood special?

We have such a huge variety. Of course we have the favorites like Snapper and Grouper. But bycatch like Porgy, Hake, and Barrelfish are incredible in their own right. The quality of our seafood can stand up to anywhere else.
