Where were you born and raised?

Mobile, AL.

How did you come to work in Alabama’s seafood industry?

My family has been in the seafood business for three decades. We began Olympic Shellfish in 2004.

What types of seafood do you process/handle?

Crab – jumbo lump, lump crabmeat, crab claw, and claw meat.

What does your typical workday involve?

Our nighttime process involves bringing the crabs in the late afternoon and boiling them, then separating the bodies for the claws. In the morning, we get started early around 4 am, pick the meat out of the bodies and that is where we get our crab claws from.

What makes your company/organization stand out within Alabama’s seafood industry?

Like most local processors, we take great pride in the quality of our product and like to keep the consumer in mind.

What is something about Alabama’s seafood industry that everyone should know (but they probably don’t)?

The oil spill affected a lot of people, but a good thing that has come out of it is this campaign and this push to promote local seafood and getting to know the community on a personal level. There is a true personal connection with this business. You really get to know who the people are and understand the care that goes into their work.

What’s your favorite seafood dish to serve up for yourself and your family?

Flounder! Baked and/or fried.

What are your favorite hobbies?

Golfing, fishing, and playing with my dogs. My wife and I have two dogs, a Bull Terrier and a Maltipoo.

What is your favorite band/musician?

Red Hot Chili Peppers and Foo Fighters.
