Alabama Gulf Seafood that your business processes: Oysters

How did you come to work in Alabama’s seafood industry?

I (Fox) was an oyster dealer in Louisiana and was displaced in 2007 after Hurricane Katrina when his plant was washed away. After Katrina, he found himself in Bayou La Batre, leasing a plant from a friend, which he eventually bought out and expanded.

What does your typical workday involve?

A new modern, automated plant was just built and we have been busy moving into it. We start our day around 6 am and go to each plant and process oysters. My sons also work with me now, so it has been nice to turn it into a family business.

What makes your company/organization stand out within Alabama’s seafood industry?

I was a dealer for so long in Louisiana that we have access to Oysters when many others can’t get them due to our network. Logistics sets us apart as well. We have our own trucking systems and can deliver products without relying on other companies. We are also farmers with our own boats and land that allows us to get our own product. We also have a high-pressure shucking machine that is probably only one of five in the country.

What is something about Alabama’s seafood industry that everyone should know (but they probably don’t)?

Alabama has an advantage over others due to their centralized location, which is great for distribution purposes. It is easy access with many different gulf species.

What is the most unusual thing that’s ever happened to you on the job?

I accidentally took another truck’s load of oysters! The truck pulled in and I assumed it was for me, until I got a call later realizing it wasn’t. The funny thing about it was that I was short of oysters that day and they guy was nice enough to let me keep them. They were great oysters, too!

Where were you born and raised?

New Orleans, LA

What are your favorite hobbies?

Sports. SEC football! Traveling with family.

What is your favorite band/musician?

George Strait, Brooks & Dunn.

If you could spend the day with any celebrity of historical figure (living or dead), who would it be?

Huey Long—40th Governor of Louisiana known for his strong and outspoken political leadership.

Auburn or Alabama?

LSU!
