Bayou La Batre, AL.

What inspired you to become a chef?

Loved the atmosphere! I loved being able to see product I could manipulate and create dishes with.

Where did you train to become a chef?

All over the place, from Washington D.C. and New York City to California.

What others jobs have you worked within the food industry?

A little bit of everything. Dishwasher, server, cook, etc.

What does your typical workday involve?

I come in everyday to work my shift just like anyone else, and I spend most of the day creating new dishes and pairings to implement for our menu.

Who is the most notable person you’ve ever cooked for?

The next guest!

What’s the most unusual thing that’s ever happened to you on the job?

I’ve seen two chefs get taken away by U.S. Marshals. That’s about all I can say about that.

If you weren’t a chef, what line of work would you pursue?

I think I’d try my hand at being a writer.

What’s your favorite seafood dish to serve up for yourself and your family?

Shrimp Creole is a family favorite, and we love fried oysters anytime of the year.

What makes Alabama Gulf Seafood special?

I love the Gulf. I was born in Alabama’s Seafood Capital, so it’s my home, and Alabama Seafood is in my blood.
